500 g Bacon, lean, diced

1 Kg Butternut pumpkin, diced

Select Salt

Select Pepper

500 g Light cheese, grated

2 each Brown onions, diced

100 g Butter

1 Litre Light milk

100 g Plain flour

3 tsp Dijon mustard

2 tsp Thyme, dried

750 g Penne or macaroni pasta

Select Spray light olive oil


  1. Preheat Oven to 180 c
  2. Place pumpkin, bacon & onion on a lined tray with baking paper, spray with oil, season with salt & pepper and roast for 20 mins or until pumpkin is soft
  3. While pumpkin is cooking, cook pasta in boiling salted water
  4. Make cheese sauce, melt butter add flour till it forms a smooth roux, add milk slowly whisk constantly, season with salt, pepper and Dijon mustard whisk in half the grated cheese
  5. In a large bowl add cooked pumpkin mix, drained cooked pasta and cheese sauce, stir well
  6. Place into individual foil dishes sprinkle the remaining grated cheese bake for 20 minutes
