Ingredients

6 each Mission Wholewheat Mini Wrap

3 each Eggs

1 cup Low fat Greek yoghurt

1 tbsp Basil pesto

1 each Red onion, chopped

0.5 each Capsicum, chopped

0.5 cup Peas or spinach

0.25 cup Frozen beans

12 each Cherry tomatoes

2 cup Low fat cheese

Recipe

  1. Cut wraps in half and fold into sprayed muffin tin
  2. Mix together eggs, yoghurt, pesto and vegetables
  3. Distribute egg mixture between muffin cups and top each cup with a tomato and sprinkle of cheese
  4. Bake for 20 minutes at 180 C

Variations

Can be made into Mexican quiche by adding salsa and beans, Morrocan quiche by adding cumin or Breakfast quiche by adding ham and cheese
