1 each Bunch of coriander

1 each Bunch of parsley

1 tsp Crushed chilli

0.5 cup Lime juice

2 tbsp Extra virgin olive oil

Select Salt and pepper

2 each Large onions

3 each Red capsicums

3 each Green capsicums

6 cup Corn

6 cup Drained kidney beans

2 Kg Lean beef mince

2 Kg Rice, cooked

1 tbsp Smokey paprika

1 tbsp Cumin

0.5 tbsp Coriander, dried

42 each 12-inch tortillas

1 Kg Cheese low fat, grated

5 cup Tomatoes, diced

5 cup Lettuce, chopped

3 cup Chipotle barbeque sauce


  1. To make a chimichurri, blend fresh parsley and coriander, chilli, lime juice, oil, salt and pepper in a food processor
  2. Saute capsicums and onion in a large pan
  3. Mix in corn and kidney beans and remove from pan
  4. Saute beef until brown and strain excess liquid
  5. Return beef to pan and add in spices, capsicum mix, chipotle sauce and rice
  6. Combine cheese and chimichurri mixture
  7. Layout tortillas on a bench and 2 cups of beef mix, 1/2 cup chimichurri mix, a squirt of chipotle, lettuce and tomato
  8. Roll up all burritos and wrap in foil or paper
