Ingredients

2 each eggs

.50 cup vegetable oil

.33 cup honey or maple syrup

.25 cup greek yoghurt

1 tsp vanilla

3 each bananas

1.75 cup wholemeal plain flour

1 tsp ground nutmeg

.5 tsp baking soda

.5 tsp salt

Recipe

  1. Pre-heat oven to 170C. Grease a 9x5 inch loaf pan and set aside.
  2. In a medium bowl, whisk the flour, nutmeg, baking soda and salt. Set aside.
  3. In a large bowl, beat eggs, oil, honey, yoghurt and vanilla for 2 minutes. Stir in the bananas and the flour mixture.
  4. Pour batter into greased pan. Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
