Ingredients

1 Kg Zucchini

10 each Cherry Tomato

1 each Onion

1 Kg Beef stew meat

2 tsp Salt

2 tbsp Tomato Paste

1 tsp Turmeric (grounded)

1 tbsp Lemon juice

1 tsp Black Pepper

3 tbsp Oil

2 cup Boil water

Recipe

  1. Heat 2 tbsp oil in a large skillet over medium-high heat. Add zucchini and cook until both sides slightly golden. Remove from pan; set aside.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Add chopped onion until translucent. Add turmeric, salt and pepper and give it a stir.
  3. Add stew meat and cook until browned on all sides, about 5 minutes.
  4. Add the tomato paste, cook for 3 minutes, then add cherry tomatoes and lemon juice.
  5. Add 2 cup boil water and lemon juice. Cover skillet with lid and lower heat to medium-low; cook until sauce has thickened, about 30 minutes.
  6. Add the zucchinis to the stew and cook for another 20 min.
  7. Serve with rice in individual portions.
