Russian Potato Salad

4 unit Eggs, hard boiled and quartered
500 g New potatoes, halved and boiled until tender (skin on if possible)
1 cup Mayonnaise, reduced fat
1 unit Cannellini beans, drained can
3 unit Green beans, blanched handful
2 cup Green peas, cooked
3 unit Carrots, cooked and diced
2 tbsp Capers
4 unit Gherkins, finely chopped
2 tbsp Parsley, chopped
4 unit Beetroot, chopped slices
- Peel and cube potatoes.
- Remove yolks from eggs once boiled.
- Toss potatoes, chopped egg whites and all other remaining ingredients in a bowl except the beetroot and egg yolks.
- Garnish with diced beetroot and crushed egg yolks.
