Ingredients

3 unit Carrot, sliced

0.25 unit Pumpkin, diced

3 unit Washed potatoes, diced

2 unit Sweet potatoes small, diced

3 unit Zucchini, sliced

2 unit Red onion, sliced thinly

3 tbsp Olive oil

1 tsp Garlic, crushed

6 unit Lavash bread or corn tortillas

0.5 cup Low fat natural yoghurt

Recipe

  1. Pre-heat oven to 200 ̊C.
  2. Prepare vegetables and toss with olive oil and garlic in a baking tray.
  3. Arrange vegetables in a single layer and bake for 30 minutes until cooked but still firm, allow to cool.
  4. Lightly spread lavash bread with yoghurt. Place mixture of vegetables down the centre of the bread.
  5. Wrap bread, cut in half and serve.

Roasted winter vegetables seasoned with garlic and served in a wrap with yoghurt.

Variations

Roast vegetables can be prepared as a large batch and kept covered in the fridge. Larger quantities can be frozen and defrosted as needed.
