2.5 cup Self Raising Four
1 cup Skim Milk
3 each Eggs
50 g Margarine
50 g Onion
225 g Corn
180 g Zucchini
70 g Carrot
100 g Diced Ham
100 g Grated Cheddar Cheese - light
9 each Cherry tomatoes
- Preheat oven to 180 degrees, oil or grease muffin trays.
- Chop or grate all vegies, drain can of corn. Mix all ingredients into a batter.only mix until all ingredients are wet and well combined.
- Place spoonfuls into the muffin trays, cut cherry tomatoes in half and place on top of muffin batter.
- Place muffin trays into the oven and cook for approximately 20 mins or until golden brown.
A delicious way to use up vegies by making these lovely moist muffins.
Can add salt and pepper sparingly to taste, leave ham out for a vegetarian option. Use any left over vegetables.
