Oodles of Noodles Cup

2 each Vermicelli noodles (bunches)
.5 cup Grated carrot
.25 unit Cucumber, cut into sticks
.25 each Red capsicum, chopped
1 tsp Sesame seeds
1 tbsp Sugar
2 tbsp White vinegar
2 tbsp Soy sauce
2 tbsp Sesame oil
- Place noodles in a bowl and cover with boiling water. Set aside for 5 minutes or until softened. Refresh under cold water. Drain.
- Combine the noodles, carrot, cucumber, capsicum and snow peas.
- Make dressing (note:- dressing ingredients makes 10 serves). Combine in a bowl sugar, vinegar, soy sauce and sesame oil and mix until the sugar has dissolved.
- Serve the salad into a cup, drizzle with 2 tablespoons of dressing, sprinkle with sesame seeds and shake cup to mix well.
A quick and easy summer salad, ideal for a tuckshop menu.
