Ingredients

5 each Carrots, spiralled or grated

1 each Orange, zest

2 tbsp Orange juice

30 g Pumpkin seeds

20 g Sunslower seeds

.5 tsp Cumin powder

.5 tsp Cinnamon

1 tbsp Honey

1 tbsp Dijon mustard

1 tbsp White vinegar

3 tbsp Olive oil

2 tbsp Mint leaves, chopped

Recipe

  1. Grate carrot into a bowl, or use a spiralizer if you have one.
  2. Add orange zest, pumpkin and sunflower seeds, chopped mint leaves, cumin, cinnamon and mix.
  3. Dressing: Combine mustard, honey, vinegar, orange juice and olive oil in a bowl and whisk together until well combined.
  4. Pour over carrot mixture and toss well and serve.
  5. Note: The dressing can be kept in the fridge for up to two days.
