Ingredients

2 Kg Boneless Pork Shoulder

8 tsp Minced garlic

3 tbsp Coriander Powder

1 tbsp Black Pepper

2 tsp Smoked Paprika

120 ml Olive oil

2 tbsp salt

2 tbsp brown sugar

60 ml apple cider vinegar

130 ml water

Select Bbq sauce/ Gluten free Bbq sauce

0.25 cup Green cabbage finely sliced

0.25 cup Red cabbage finely sliced

0.24 cup Grated carrot

1 tbsp Flat Parsley finely sliced

2 tbsp Coleslaw Dressing

2.1 Kg Pita Bread pockets

Recipe

  1. Put pork in large bowl or zip bag.
  2. Mix together garlic, coriander, paprika, pepper, oil, salt and sugar and rub into pork. Refrigerate for 2 hours or leave overnight to marinate.
  3. Preheat oven to 160\'C (or use a slow cooker on low for 6-8 hours).
  4. Put marinated pork in dish, pour vinegar and 130 ml water into dish and cover.
  5. Oven method - cook for 4 hours or until tender. Shred meat.
  6. Coleslaw - Mix well together both cabbages, carrot, parsley and dressing.
  7. Lightly heat pockets in microwave, open and fill with shredded meat, BBQ sauce and Coleslaw.

Full description

An American classic, the meat is slow-cooked or oven baked, then shredded and layered with BBQ sauce and crunchy coleslaw in a bread pockets. Gluten free bread rolls and coleslaw dressing can be used instead of pockets to make a gluten free version. Thanks to Christian Outreach College Toowoomba for sharing the recipe.

Variations

Make large batch of roast pork. Shred and freeze meat in smaller zip bags. Use gluten free bread rolls instead of pockets and gluten free coleslaw dressing and BBQ sauce for a gluten free version.
