Honey Soy Noodle Salad cups

500 g Singapore noodles
2 unit carrots - peeled and grated
2 unit shallots - trimmed and sliced
1 unit cucumber
unit Small red cabbage - finely shredded
2 tsp sesame seeds
4 tbsp honey
3 tbsp salt reduced soy sauce
3 tsp sesame oil
- Place noodles in a large bowl. Cover with boiling water, stand for 1 minute, drain noodles, refresh in cold water and set aside for a few minutes to dry, place noodles into bowl.
- Mix with noodles- grated carrot, sliced shallots, finely shredded cabbage.
- To make soy & honey dressing - combine all ingredients ( honey, salt reduced soy sauce, sesame oil) in a screw top jar and shake until well combined. Pour over the noodle and salad mix and toss to combine dressing. Sprinkle sesame seeds on top.
Light, fresh and sweet vegetarian noodle salad.
